Still having fun and being healthy!

So I have been doing some trial and error and I feel like a little dairy now and then is not hurting the kids...however the gluten-free diet has been tremendous, and I no longer feed them glasses of milk - only almond or soy...

Made the most excellent seafood enchiladas last night and convinced the kids they were chicken...just used surimi flakes for the fish, and a sauce made of onion, pepper, sour cream and corn starch. You mix in some chicken broth and make the sauce very much like a stroganoff. Serve with corn tortillas.

The biggest struggle continues to be school lunch. Luckily I found a new gluten free bread that ALMOST tastes normal. 'Udi" sandwich bread. YAY! You don't know how happy this makes me, even at close to $7 a loaf.

Peer Pressure

Well, the good news is I already notice a calm down in my son and daughter's cough cleared up as well (although that could be a coincidence).

The tough news is, I am having a VERY hard time with his lunch for school days. I sent soup in a thermos yesterday with rice crackers and an apple, and the only thing he touched was the apple. When I asked him why he said very apologetically that the kids would make fun of him for his weird lunch so he pretended he just had an apple. Apparently, if he doesn't have a white bread bologna sandwich, cheetos and twinkies, he can't be in the "in" crowd.

Today I sent him with a turkey sandwich on rice bread, which he did attempt to eat, but complained that the bread tasted weird. I ate some myself and it IS gross. Back to the internet for me, need ideas to keep my son fed!

Terrific Chili

mmmm i just whipped up the best chili for tomorrow....

a few cloves of chopped garlic
sweet red and yellow bell pepper
yellow onion
ground turkey

sautee all of the above with  1 tbsp chipotle chili powder, 1 tsp turmeric, 1/4 tsp allspice, 1 tsp cumin, 1/4 tsp black pepper

add 2 can chopped tomato
add your preferred amount of red chili beans (I bought dry beans to cut down on salt content - did the quick soak for 2 hours with 1/2 lb beans)
16 oz or so of chicken broth
1 cinnamon stick
1 tsp dried basil
a bit of parsley

bring to boil, then take cinnamon out and simmer on low, covered....

hoping the tomatoes don't make him hyper! or the chipotle too spicy...but for adults, its definitely cheap and good as well as gf/df/sugar free/low sodium/low fat

Day 2 - so far...

So far, so good...I let the kids have rice chex with almond milk this morning. I stuck with the plain almond milk because i see the vanilla has added sugar. Even if it says "cane juice" which is better than corn syrup, I am supposed to cut sugar out completely due to the candida/yeast concerns. I can let them add a packet of truvia in place of the sugar...but not splenda or sucralose which are not good chemicals for children - or anyone, really.

Packing my 7 yr old's lunch lunch was interesting...I stuck two hardboiled eggs in a thermos and gave him some rice crackers with soy cheese and a banana. I put grapes in a tupperware for his snack. I seriously hope he doesn't starve by 3 o clock. or get made fun of by the other kids! I have snack reinforcements ready for after school and plan on making his fave dish for dinner - spaghetti! (with rice pasta of course). The Emerils sauce I found on sale for $3.27 a jar and it contains all natural ingredients and NO added sugar. The only thing I worry about is I have heard from some friends that citric acid foods can cause the hyperactivity as well. I am going to try it tonight and see how he reacts.

Another interesting thing I am researching today are probiotics and supplements that help clear out the candida that may already be built up. Also B vitamins - need to ask pediatrician about this.

Day 1

After years of struggling with grumpy/hyper-active kids who I swear are OVERLY emotional and so high strung they are about to pop, I hear from our pediatrician that candida, or yeast, could be causing the issue.

Yeast builds up in your body when certain foods we eat are hard to digest and sit in our colons. Yeast ferments and turns into sugar, which in turn gives the kids a constant source for their jolts of energy. In adults, it causes fatigue, bloating/diarhhea, auto-immune disorders and eventually leads to cancer.

My mom called me the SAME DAY I heard this from the pediatrician and tells me she has lymphoma. What is lymphoma? Caused by auto-immune disorders!!!

It doesn't take much more to convince me...I wrote out a meal plan and went to the grocery immediately. I have the whole family tentatively on board with me. If only I can hold their interest (and the family pocketbook together). The advice we were given is to cut out dairy, gluten, sugar and peanuts. I decided to keep eggs in the mix for now and see how we do....of course I only buy the vegetarian free-range organic eggs anyhow after seeing those PETA videos of all of the chickens stuffed in dark cages...

This week's meal plan:

Breakfast stuff - rice chex, fruit, smoothies with almond milk, gluten free/dairy free toast

Lunches - hard boiled eggs, egg salad with grape seed veganaise, organic/gluten/dairy free soups for the thermos, celery/carrots with hummus, rice crackers, gluten free/nitrite free lunch meat, soy cheese, gluten free pasta salads, and rice/veggie dishes.

Dinner:

Monday: Eggplant parmesan made with cornmeal and brown rice pasta - no cheese just lots of yummy marinara sauce.

Tuesday: Vegetarian Chili with corn tortillas - Dr Weil's recipe with chipotle chili powder

Wednesday: Broccoli and Soy Cheese Stuffed Baked Potatoes

Thursday: Gluten free chicken pot pie bowls

Friday: Black Beans and Rice

TOTAL GROCERY BILL: $182.55 (eeeeks thats sooo much more than I usually spend on processed hot dogs and chicken nuggets! lets hope this works...)

I am really hoping to see a difference in everyone's energy and focus levels....I will blog each day so I can keep track of my son's progress....
