Still having fun and being healthy!

So I have been doing some trial and error and I feel like a little dairy now and then is not hurting the kids...however the gluten-free diet has been tremendous, and I no longer feed them glasses of milk - only almond or soy...

Made the most excellent seafood enchiladas last night and convinced the kids they were chicken...just used surimi flakes for the fish, and a sauce made of onion, pepper, sour cream and corn starch. You mix in some chicken broth and make the sauce very much like a stroganoff. Serve with corn tortillas.

The biggest struggle continues to be school lunch. Luckily I found a new gluten free bread that ALMOST tastes normal. 'Udi" sandwich bread. YAY! You don't know how happy this makes me, even at close to $7 a loaf.
